This authentic Jamaican Pineapple Ginger Drink combines the bold zest of ginger with the sweet, tropical flavor of pineapple for a refreshing treat. The traditional recipe uses pineapple skins boiled with fresh ginger and soaked overnight to extract the maximum flavor. It’s then strained, sweetened with honey or sugar, and brightened with a squeeze of lime. This drink is perfect for hot days and can be served over ice or with a splash of rum for a tropical twist.

Ingredients:

  • Peels of 1 large pineapple (washed)

  • 4-inch piece of fresh ginger, peeled and sliced

  • 8 cups water

  • Juice of 2 limes

  • 2-3 tbsp honey or sugar (optional, to taste)

  • Ice (for serving)

  • Optional: Pineapple chunks and rum

Instructions:

  1. Boil: In a large pot, add pineapple peels and ginger slices to 8 cups of water. Bring to a boil, then simmer for 20-30 minutes.

  2. Soak: Remove from heat, cover, and allow the mixture to steep overnight to absorb all the flavors.

  3. Strain: The next day, strain the liquid to remove the solids.

  4. Mix: Add lime juice and sweeten with honey or sugar. Optionally, blend in some pineapple chunks for added texture.

  5. Chill and Serve: Refrigerate the mixture and serve cold over ice. Add rum for a fun twist if desired.
